Banana Nut Bread


Ever buy that bunch of bananas at the grocery store thinking you can conquer it in a week's time? Me too. I fail 95% of the time. I'm always left with 2-3 very ripe bananas hanging out by the weekend. That's where Banana Nut Bread comes into play in my kitchen! Here is a super easy recipe that can be modified with additions, such as chocolate chips, coconut, or other fruit.

Banana Nut Bread

2-3 ripe bananas
1/3 cup melted butter, unsalted
3/4 cup brown sugar
1 egg, beaten
1 teaspoon vanilla extract
1 teaspoon kosher salt
1 teaspoon basking soda
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1 1/2 cups flour, unbleached
1/2 cup walnuts

In a medium bowl, mix together salt, baking soda, cinnamon, nutmeg and flour with a whisk. Set aside. In a larger bowl, mash the bananas with a fork. Add melted butter and brown sugar to the bananas. Mix until blended. Next, add the egg and vanilla extract and mix. In small batches, incorporate the flour mixture to the wet banana mixture. Do this just until you cannot see any dry flour. Over mixing will make the cake dense. Finally, add in your walnuts. This is the point where you can add other ingredients to the mix, but be careful with added other fruits as they may add more moisture to the batter making it cook a lot longer than you anticipated. Spray your baking dish of choice (see below) with cooking spray - I prefer a coconut oil spray.
